Easy magical minestrone for a cosy dinner with your loved ones, buon appetito!
Ingredients:
- 2 tsp of minced garlic
- 7 medium tomatoes
- 1 bag of chicken broth
- chilli flakes
- 2-3 cups of gluten-free pasta (I like mine with fusilli pasta)
- 2 cups of chopped mixed sweet potato and butternut squash
- 2 chopped courgettes
- sea salt & black pepper
- extravirgin olive oil
- 2 cans of chopped tomatoes
- manchego cheese
How to prepare:
- whizz in your Vitamix/food processor the tomatoes, garlic, chicken broth and chilli flakes
- when the soup is smooth but firm pour it in a big pot simmering on low heat
- in the meantime boil water and cook the pasta for 8-10 minutes
- add to the pot all the other veggies and let it simmer for other 30 minutes, adding sea salt and black pepper to taste
- pour a good splash of extravirgin olive oil and the chopped tomatoes to the minestrone
- add pasta and grated manchego cheese as topping for a pure comforting experience!
